Chia seeds are one of the healthiest foods on the planet and are packed with nutrients to benefit your body and brain. They are packed with antioxidants, whilst being high in quality protein and fibre. They are high in Omega-3 fatty acids and are filled with a massive amount of nutrients whilst being low in calories. They also contain magnesium, calcium, phosphorus as well as a decent amount of zinc, vitamin B3 (niacin), potassium, vitamin B1 (thiamine) and vitamin B2. These are the bad boys of the seed world and who does not like the creaminess and taste of the exotic, being the coconut!

This recipe is not only off the scale delicious, but it only requires a few ingredients and takes just a few minutes to make before popping it in the fridge for it to works it’s magic and allow the chia seeds to expand. In saying that, it works just as well if you leave it for just an hour.

Ingredients

1/4 cup chia seeds

2 tbsp shredded unsweetened coconut

1 x 400gm can light coconut milk

1 tsp vanilla extract

2 tbsp maple syrup

Method

Mix all the ingredients in a bowl.

Leave to stand for 10 minutes, stirring 2-3 times to break up any clumps.

Cover and pop in the fridge. I leave mine overnight, but 1-2 hours will be fine.

Remove from fridge, serve and enjoy!

Why not add some extra delights to this already magical little number?

I like to add strawberries as they work so well with the coconut along with blueberries, raspberries with some toasted coconut. You can also add dark chocolate nibs to add a bit more crunch. Yum!
